Montréal chef Chuck Hughes (Garde Manger, Le Bremner) and Dynamo (a digital design agency) have created Deep Dish MTL, an appetizing new iPad app that’s a digital cookbook crammed with recipes from some of some of Montréal’s most renowned chefs.
Lists of ingredients and equipment per recipe, gorgeous photos and a glossary are all included. The first of its kind in Canada, it allows those of us who don’t live in this glorious city an opportunity to enjoy its cuisine long after our visit. And, for those of us who haven’t had the pleasure of stepping on its soil, it’s even more tempting to book a flight stat.
The app provides five free recipes immediately upon download. Pack of 10 recipes from each chef is available for download for a nominal fee.
So who are the chefs?
Emma Cardarelli
Former Chef de Cuisine at Montreal’s Liverpool House, Emma has now opened her own place, Nora Gray, which specialises in authentic Southern Italian cuisine. Her Chick Pea Hot Pot recipe on the app sounds amazing.
Derek Dammann
Derek’s culinary talents landed him the position as Chef de Cuisine at Jamie Oliver’s ‘Fifteen’ in London, England. This ultimately lead to his partnership with Jamie in opening the new Montreal restaurant Maison Publique located in the Plateau area.
David McMillan and Frédéric Morin
Joe Beef and Liverpool House, the critically acclaimed, popular restaurants located in Montreal’s Little Burgundy district are co-owned by chefs David McMillan and Frédéric Morin. The restaurants focus on serving homemade Canadian food using local ingredients with a menu that changes daily.
Dyan Solomon
After completing her diploma at the New England Culinary Institute, Dyan joined team Toqué. There she met Eric Girard with whom she later founded the bakery Olive et Gourmando.
Chuch Hughes
Chuck is the youngest chef to win Iron Chef America, and is the host of the cooking series Chuck’s Day Off on the Food Network in Canada. He is the chef and co-owner of Garde Manger and Le Bremner located in Montreal’s Old Port.
